Our Monster Halloween Ice Cream is a creamy pistachio ice cream with chopped nuts included. It’s delicious, and the best part? It requires no ice cream machine, churning, or even eggs!
Why Ghostbusters?
We love the idea of serving our Monster Ice Cream during a Ghostbusters Movie Night because the ghosts’ slime is green! It makes it the perfect addition to a fun movie night at home!
If you’ve never had pistachio ice cream, you’re in for a real treat! It’s a light custard-like base with an addicting nutty flavor that will have you coming back for seconds!
What You’ll Need to Make This Homemade Pistachio Ice Cream Recipe
- 2 1/2 cups heavy whipping cream
- 3oz package pistachio pudding mix
- 1/2 cup crushed pistachios
- 10oz can sweetened condensed milk, to taste (optional)
- Mini Candy Eyeballs (optional – not pictured)

If you’re making this recipe for a Halloween Party, we highly suggest folding in some mini candy eyeballs for fun!
Optional Sweetened Condense Milk
The sweetened condensed milk makes the recipe a bit sweeter and more creamy, but it’s not required.
How to Make It Homemade Pistachio Ice Cream
- Mix the heavy whipping cream in a large bowl using an electric mixer for 4-6 minutes, until soft peaks form.
- If you’ve chosen to add in the sweetened condensed milk, gently stir it into the whipping cream.
- Gently mix in the pistachio pudding powder until no dry patches remain, being careful not to over-mix.
- Fold in the pistachios and then pour the mixture out into a clean loaf pan.
- Optional – fold in the mini edible eyeball candies.
- Freeze for 3 hours or overnight.
