This year we made these cookies, as well as, Grinch Cookie Dip with a Heart Sprinkle!

These Grinch Christmas Cookies are super easy to make, and we love how light and fluffy they are!

What You’ll Need:
- 1 15-ounce box vanilla cake mix (any brand of cake mix works!)
- 2 eggs
- ½ cup vegetable oil
- 2 drops of green food coloring (We used a gel color for a vibrant color)
- ½ cup red and green M&Ms
- ½ cup white chocolate chips
- Extra M&Ms and white chocolate chips to decorate
How to Make Grinch Cookies with Cake Mix
- Start by mixing together the cake mix, eggs, and vegetable oil in a large bowl. Combine with a hand or stand mixer on medium speed.
- Then add in your green drops of food coloring and beat until well mixed.
- Stir in the green and red M&Ms and chocolate chips.
- Cover and let the cookie dough chill in the fridge at least 30 minutes.
- When you’re ready to finish your cookies, preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- Using a cookie scooper, small ice cream scoop, or tablespoon scoop out the dough evenly. Roll the scoop of dough into a ball and place it on the lined baking sheet.
- You can decorate each ball of dough with additional candy and chocolate chips now if you want.
- Bake the cookies for 10 to 15 minutes, until the edges of the cookies are slightly brown.
- Allow the cookies to cool on the cookie sheet for five minutes, then transfer to a wire rack to cool completely before serving.
